Mama’s Easy M’sekhan Rolls

SO this is a follow up to the Magic Soup Recipe…..or basically if you have left over chicken meat or if you happen to have a rotisserie chicken or any cooked chicken handy these are super duper easy to make and take a few minutes.

M’Sekhan Rolls Ingredients:

  • Shredded cooked chicken.
  • 1-2 large onions sliced into feather slices
  • alot of olive oil
  • a cup of pine nuts
  • Sumac
  • tortilla bread, or Shrag bread if you have any handy

  1. Get the feathered raw onion and fry it in 2-3 tablespoons of olive oil till golden and glistening *PS. Do NOT be afraid to use olive oil in this recipe coz we are going to be adding more as we keep putting it together*
  2. Add the pine nuts and mix them up with all the onion
  3. add the shredded chicken….you’re going to want to add more olive oil here…. mix all up…
  4. add sumac…now there is no certain amount it just depends on how much you like it…..I always add loads coz I LOVE the sour flavour…love it….
  5. TRY IT ALL NOW….. IF ITS DRY AND LIKE THE CHICKEN IS SUPER DRY ADD MORE OLIVE OIL……
  6. Get a pyrex, a baking dish and put some olive oil on your hands and rub the inside of the dish…
  7. TASTE for seasoning…..
  8. Get the tortilla bread and stuff it with the mix and roll. If you have the large size tortilla bread then stuff it, roll it and then cut it in half….
  9. once stuffed and rolled then place them side by side in the baking dish and brush with olive oil and bake in the oven at around 200 degrees. Once they look a little golden and brownish then they’re ready. YUM!
