Sooooo. Colder seasons are upon us and you are going to need more warming and cozy recipes…here is the easiest version of Freekeh Chicken Soup (you can also do it with lamb if that floats your boat.)
Ingredients you’ll need:
- 1 Rotisserie Chicken or 1 pack of chicken with bones in.
- A cup of freekeh
- A carton or two of chicken broth (maybe have two cartons available just incase)
- a magi/stock cube…. they have yummy organic ones if you are particular…
- one large onion chopped
- salt, pepper, fresh lemon, olive oil.

- Get a Rotisserie Chicken and shred it (depending on how much your making shred as much as you need…use two forks to shred it into tiny pieces)……. * if you want to make everything from scratch…then grab any pieces of chicken or meat with the bone in and cover with water in a pot, add 4 bay leafs, one large onion chopped in quarters and bring to a boil and then let simmer for at least an hour….when it starts to boil just scoop out the foam that comes off the chicken or meat and throw it away……then shred it and seive the broth and keep aside*
- Chop one large onion into tiny cubes and fry in like 2 large tablespoons of olive oil in a pot large enough to hold the soup…… fry till golden and glistening.
- Get a mug full of raw freekeh…. rinse and wash and seive until the water runs clear…that means its clean.. then add it to the onion and mix them all up…..add salt, pepper and one cube of magi
- Get a carton of chicken broth *or if you’ve boiled your own chicken then add that now to the pot* its a soup so don’t be afraid to add a lot of liquid coz it will keep boiling until the freaked is soft as freekeh takes a lot of water)….so keep your eye on it… if the water starts to disappear too much keep adding more water… tasting for seasoning all the time.
- Once the freaked is soft *taste for seasoning!!!* then add the shredded chicken…. And you’re done :))))
- Serve with a squeeze or two of lemon.
P.S If you have chosen to go with lamb then you would also have chosen a couple of pieces of raw lamb with bone in and do exactly the same as the instructions for the chicken
