Teta’s Yekhmi Batata

So she doesn’t make it often but when she does you all go nuts. It is a super duper easy recipe but loaded with flavour and fresh broth (although she admitted that when she doesn’t have broth she uses a stock cube)…. so here it is. Serve wiht her rice and enjoy…

Ingredients:

: 1 medium-sized potato chopped finely.

:2 large garlic cloves crushed

: large potatoes peeled and cubed and fried lightly in oil.

: 1 liter of either fresh-made bone broth, or stock made using a stock cube.

Method:

In olive oil and a tablespoon fry the onion till golden.

Then add the garlic and fry off without burning, also till golden.

Add the broth to the onion and garlic.

give it a good mix and a taste for salt or pepper.

Let them boil once together then add the potato.

Boil all together till the potato is tender.

Once you’re done then add the magic which is: in a tiny frying pan, add a good dollop of semna and then fry off about 1 to 2 cloves of roughly chopped garlic once it has changed color (stay on it because this happens super fast) then add it to the pot with the yekhni in and mix and serve.

Serve with rice….
