Teta’s Mujedarra

This is an epic and super version of making the BEST Mujedarra. Super duper easy and super duper tasty!!:)

Mujedarra Ingredients:

  • 1 cup of Black/brown lentils (soak in water)
  • 1 cup rice (soak in water)
  • 1 diced white onion
  • olive oil
  • 1/2 tspn cumin
  • salt
  • 1tspn turmeric
  • 1 bouillon cube of chicken/veg
  • 2 sliced/feathered white onions coated in flour.
  • plain yoghurt

Method:

  • Boil the brown lentils in water over medium heat: make sure you don’t over boik them. they should remain slightly firm.
  • once the lentils are ready, drain THE WATER INTO A BOWL and SAVE THE LENTIL WATER
  • in a saucepan drizzle a good amount of olive oil and fry off the diced onions till golden.
  • add the boiled lentils to the golden onions and mix it all up then add the drained off rice; once the rice is added, add the turmeric and cumin and a pinch of salt and crumble up the bouillon cube in and mix it all up (i usually take a tiny teaspoon amount and try it to test for seasoning.
  • add the lentil water to cover the rice. Up to where the first line of your index finger is or just a wee bit over. If there isn’t enough of the lentil water left then top up with hot water. Let it come to a boil and then lower the heat all the way down, cover and let it simmer gently.
    • Meanwhile, for the onions, if you want to have the crispy onions, you can either find them in some supermarkets already crispy. If not: coat the onions in some flour, add salt to the flour before you coat them. Heat ALOT of oil in a frying pan, wait for it to get hot ( to test the temo of the oil is hot enough: flick at a distance a few specks of water at the oil….safe distance…..just dip fingertips in some water and flick the water in the oil, if it sizzles its ready)
    • if the oil is ready fry off the onions in batches. not all at once and don’t crowd the pan.
  • once the rice is ready to serve. If it’s still chewy add a bit more water and cook off for a wee bit longer. If it seems mushy, leave off the saucepan lid and let it cook off a wee bit longer.

Bouns Round: some of you guys like this with Arabic salad. Which is super duper easy….chop up one large tomato, one large Arabic cucumber =1/4 long european cucumber, 1/2 a white onion and mix it all up. Drizzle with lemon olive oil and salt: serve on the side.
