Shorabat 3adas

So autumn is coming and its gonna start getting colder so what could be better then home made Shorabat 3adas:) .  SO here it is…

SHorabat 3adas Recipe:

  • 2 cups of red lentils and soak them (this is a good amount for a butt-ton of leftovers for your fridge:))
  • 1 large diced onion ( or a bag of pre-diced onions from wherever:)
  • 1 chopped carrot super duper small ( if you’re in a rush and heading home and passing a supermarket, sometimes they have a soffrito pre-chopped bag of veggies with celery, carrots, onions- one of these will work too)
  • 1 bouillon cube chicken or veg
  • salt/pepper
  • Cumin
  • Bread to make croutons or premade croutons.
  • Vermicelli if desired, if available.
  • Olive Oil
  • lemon

Method:

  • Drizzle a healthy amount of olive oil in the base of a saucepan
  • bung in the onion and fry off…. sprinly a healthy pinch of salt
  • meanwhile soak the lentils in cool water
  • once the onion is glistening and golden then add the carrots/ the bag of soffrito and toss it around and let it saute for a couple of minutes ( try the veg, they should be not all the way cook but more cooked then raw).
  • once veggies are cooked, drain off the lentils and add them to the saucepan and mix it all up.
  • add a 1/2 teaspoon of cumin, add the cube of bouillon by crumbling it with your fingers and then mix it all up. Add salt and pepper.
  • add hot water to cover the lentils (should be approximately less then halfway up your index finger.)
  • Let it simmer on low heat till lentils get soft. If it looks a bit on the dry side, add a little more water.
  • Once lentils have cooked, tip it all in your blender and zap it.
  • return to the heat and taste for seasoning adjustment and consistency. Add any seasoning if needed, if it’s too thick add water and taste again.
  • If you want vermicelli add a hand full now and let it cook off.
    • For the croutons: Get Pita bread and chop it up into cubes and toast it in the oven. If you don’t have an oven, just put half a pita in a toaster till toasted and then chop up if needed.
  • Serve hot and dont forget a spritz of lemon.

Bonus Round: You guys don’t like it heavy on the cumin so don’t be too liberal with it 🙂
