Zanzooni introduced us all to these one morning in Cobham….and the rest is history. We all love them and they are super duper easy to make….
Banana Pancakes: Ingredients
- 125ml any kind of milk you want
- 2 eggs
- 1 banana
- 100g rolled oats = 1 1/2 cups of oats (if you don’t have scales)
- 2 tspns baking powder
- a few drops of vanilla (if you dont have it no probs don’t add it…..if you have cinnamon add a teeeeny pinch of that instead/as well)
- bit of butter/healthy spray oil to cook them
- frying pan
- a bullet mixer/any mixer
Method:
- Bung all the ingredients in your blender of choice.
- if it looks super duper sticky and thick add a bit more milk
- place your frying pan on a medium/low heat
- add either a small knob of butter or a spritz of oil to the frying pan
- ps. between every pancake wipe down the frying pan and add fresh butter or oil…. it stops them from going gross and crusty (to use words of Khaled circa 10yrs old)
- pour in some of the batter (best to eyeball how big you want them)
- one the mix starts to set and you can see bubbles/pockets like moon craters on the face of the pancakes, flip em.
- give them a few minutes 1-2 on the other side and your done!
Bonus Round: Serve them with syrup, peanut butter, nutella (Ghazi), or plain yoghurt and fresh berries with a drizzle of honey. If you want to add berries to the actual pancakes so the berries get gooey…..once you’ve poured the batter in the frying pan, place your berries in the face of the pancake…frozen/fresh same same… when you flip them give them an extra 30 seconds to smushify……
