Well. My first ever recipe would have to be Smashed Eggs:)
From my childhood to yours and it keeps on keeping on. I remember Um Farah making this for me and loving the smell of the fresh olive oil and the mushiness of the eggs.Gobbled down with either fresh Ka’ik or bread fresh from the bakery or on its own; its a winner. You guys love them and I love you so voila: Smashed Eggs….
Smashed Eggs: Ingredients
- Eggs
- Olive Oil
- Saucepan
- Salt
- Timer on your phone
If you’re Khaled workout hungry go with 5 eggs, otherwise 3 eggs is good, gives you enough to fill your belly and then some.
Method:
- Boil the eggs :
- Take your eggs out of the fridge (room temp eggs work best if they’re not room temp just bung them in a bowl with warm water while you get everything ready)
- Bring a medium/small saucepan full of water to a nice bubbling boil…water should be bubbling and pooping.
- when water is boiled, add a sprinkle of salt to the water
- (helps reduce any eggy smell to the kitchen/room your cooking in/ helps them not crack) then add your eggs on bey one slowly (use a tablespoon to lower coz its gonna be hot hot hot)
- Once all eggs in set your timer (leave lid off)

- 5 1/2 min for soft boiled
- 7 1/2 min for medium boil (most of y’all prefer this one
- 11 1/2 for hard boiled
- How to boil an egg

- Once Boiled remove sauce pan off the hobo and run the eggs in the saucepan under cold water to cool them off a wee bit.
- Peel the eggs
- Best way is to get a piece of kitchen paper, lay it flat and roll your boiled egg gently so the shell begins to break then using the side of your thumb, NOT FINGER TIPS coz you’re gonna start digging rather then peeling…
- Place all the eggs in the bowl you wanna eat them in and begin smooshing them with a fork….fork it fork it…….
- Once they’re at your desired mushiness add Olive Oil (make sure its good olive oil)…add a tablespoon to begin with then mix them up and taste. You guys like them heavy on the oil coz its YUMMY….add salt bit by bit in pinches…mix up and eat !
Bonus Round : You can also add, Zaatar, Sumac (easy on the salt if adding either of these coz these spices can be salty in themselves) Ghazi now likes adding chilli flakes.
